Slow Cooker Sweet Potato

"This slow-cooker curry is heaven in a bowl. It has a little kick from the spices and a little sweetness from the sweet potatoes."
Ingredients
- Chicken Breasts 1 ½ lbs
- Sweet Potato 1 large
- Yellow Onion ½ medium
- Garlic Cloves 3
- Chicken Broth ¾ cup
- Curry Powder 3 tbsp
- Ghee 2 tsp
- Cumin 1 tsp
- Turmeric 1 tsp
- Sea Salt a pinch
- Coconut Milk 14 oz
Directions
1. Sauté Aromatics
In a small pan over medium heat, add the ghee, diced onion, and garlic. Sauté until the onions are translucent and fragrant.
2. Combine in Slow Cooker
Place the chicken breasts, cubed sweet potatoes, and sautéed aromatics into the slow cooker. Pour in the chicken broth and stir in all the spices (curry powder, cumin, turmeric, and salt).
3. Slow Cook
Cover and cook on Low for 6-7 hours or High for 3-4 hours until the chicken is tender and sweet potatoes are soft.
4. Finish with Coconut Milk
Shred the chicken slightly with two forks. Pour in the coconut milk, stir well, and let it sit for another 15 minutes to thicken before serving.
Note: Serve hot over cauliflower rice or jasmine rice. Adjust spice levels according to your preference!
